Bahur-Making Demonstration at the Ethno Kitchen of the Burgas Museum

In Bulgaria, bahur (a traditional Bulgarian sausage of pork, offal and rice) is arguably the most beloved Christmas dish of all. It was celebrated in a performance by Krastyo Lafazanov as a humorous counterpoint to culture, and it became a true folk hero of the Transition. In the village or in the city, bahur remains a favourite and much sought-after winter food. For the team of the Burgas Museum, what matters most is that it is a truly archaic delicacy, dating back at least to the Middle Ages. A restored old recipe from the Kotel Balkan will be presented on Thursday, 18 December, at 11:00 a.m. in the Ethno Kitchen at the ethnographic exhibition.
To make the pleasure complete, the museum team has invited the writers of the Burgas Writers’ Community and the Satirical Club “Morski Raci” (“Sea Crabs”) to enjoy bahur, leeks and red wine. The writers will take on the serious task of attending the demonstration and each writing a “blitz” poem dedicated to bahur. Their works will be published by the Burgas Museum as a poetry collection.
So, beyond the culinary demonstration, we will also answer a fundamental question: can bahur be a muse for poets?
